Fried rice is a delicious and versatile dish that can be made with a variety of ingredients. Here’s a basic recipe to get you started:


  • Cooked rice (leftover rice works best, but freshly cooked rice can be used too)
  • Cooking oil (vegetable oil, sesame oil, or any other neutral oil)
  • Aromatics (garlic, ginger, onions, scallions, etc.)
  • Vegetables (carrots, peas, bell peppers, broccoli, etc.)
  • Protein (chicken, shrimp, tofu, eggs, etc.)
  • Soy sauce
  • Salt and pepper to taste
  • Optional: other seasonings like oyster sauce, fish sauce, or chili paste for extra flavor


  1. Prepare your ingredients: Chop all your vegetables and protein into small, bite-sized pieces. Mince garlic and ginger if using. If you’re using leftover rice, break up any clumps with your hands.
  2. Heat the pan: Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and swirl to coat the pan evenly.
  3. Cook the protein: If you’re using raw meat or tofu, add it to the pan and cook until browned and cooked through. If you’re using cooked protein like shrimp or leftover chicken, you can add it later with the vegetables.
  4. Aromatics: Add minced garlic and ginger to the pan and cook for about 30 seconds until fragrant.
  5. Add vegetables: Add any vegetables that take longer to cook (like carrots or broccoli) and stir-fry for a few minutes until they start to soften.
  6. Add rice: Add the cooked rice to the pan and stir-fry with the vegetables and protein. Break up any clumps of rice with a spatula and mix everything together evenly.
  7. Season: Drizzle soy sauce over the rice and toss to coat evenly. Taste and adjust seasoning with salt, pepper, or additional soy sauce as needed. You can also add other seasonings like oyster sauce or chili paste at this point.
  8. Finish: Push the rice to one side of the pan and crack eggs into the empty space. Scramble the eggs until they’re cooked through, then mix them into the rice.
  9. Serve: Once everything is heated through and well combined, remove the pan from the heat and serve the fried rice hot. Optionally, garnish with chopped scallions or cilantro for extra flavor.
